Wine

The Dalles have wine delivered as needed to the house. There is a red, a white and a rose, any two of which seem to be on the table for lunch or dinner and in endless supply.

This morning, we all went for a wine tasting and restocking at 11:00. We tried 6-7 wines, all of which were good, and learned to make the appropriate comments en francais. I can describe a wine as tart, but I also learned what the word for "wuss" is, as well as some words inappropriate for this blog. My students would have loved those words.

I knew about "riddling" sparkling wines - the traditional process of rotating a bottle so the sediment settles in the neck. The neck can then be flash frozen and the plug of sediment popped out. I thought that was still done in dark caves by hand, but below is how riddling is now handled - a palate of bottles at a time.

Back at La Giro, the guest list will soon change. Tim, Dave, and Anne-Marie depart tomorrow morning and Emily, Debbie, Delson, and Lilly have just arrived. Emily was my other ESL professor at the UofM. I taught Debbie's son Corbett at CBHS and worked with her when I taught ESL at State Tech back in the nineties. Delson and Lilly are their grandkids. So there will be 13 at the dinner table tonight.

In other news of greatest importance, I have heard that there is a chocolate factory in the area. Need I tell you that we intend to find out about that tasting? -Dan
